Cupcakes for Breakfast?
Unless you’ve braved an early morning class or two during the week, you may not recognize the face to the left. Everyone meet Aaron. He and his wife, Cynthia, are regular fixtures in our 6 am classes and they both inspired today’s post. We were all chatting last week about quick breakfast ideas. Aaron revealed to me that he occasionally powers down a raw egg or two with some juice in the mornings. While I like to think that I have a brave palate, I’m not ready to head down that road of convenience just yet. However, our conversation reminded me of some quick and easy recipes I had seen for egg cupcake variations on two separate CrossFit affiliate blogs.
I first saw a recipe like this on CrossFit Invictus’ site. The post was written by amazing chef and all-around bad ass CrossFitter/coach, Michele Vieux. Hers was more of a frittata variation. I never got around to trying out her recipe but it sounds damn good and it will definitely be attempted in my kitchen soon.
The egg cupcake offering I did end up making was provided by the awesome folks at CrossFit Norcal. They’ve never steered me wrong with recipes before so I was immediately interested in giving this a shot. I pretty much used items that were lying around the fridge to make this happen. The recipe is pretty flexible so you can modify according to your own preferences. Here’e what I did with the oven preheated to 350:
8 eggs (beaten)- Trader Joe’s red, green and yellow peppers medley (diced)
- Leftover Brazilian barbecue beef (diced)
- Salt, pepper, garlic salt, and paprika and a little bit of salsa added generously to the mix
- Mix together and pour evenly in the olive oil greased cups of a 12-muffin pan and bake for 20 minutes.
When I do this next time, I think I’ll add bacon or sausage into the mix to add a bit more flavor but it still came out pretty good. The end result left my family and me with something quick to grab before we head out the door to work and school. I have severely limited skills in the kitchen (just ask Michelle) so if I can do this, anybody can. A little bit of work on Sunday added a whole lot of convenience well into the week.
