
Though not as popular as a post advocating alcohol, this recipe will hopefully at least encourage you all to cheat within Paleo boundaries. The Sweet Potato, though damned by the Zone as a high glycemic carb has been widely embraced by many CrossFitters as a perfectly dense post-WOD carb. It’s also a great alternative to those 20+ block a day athletes who just can’t seem to 10 cups of broccoli down with each meal.
Here’s a way to make the delectable sweet potato even better:
Bake sweet potato at 350 for 30-45 minutes until tender and juices start to seep out. Take 1-2T butter, 1T raw honey, and a dash of cinnamon and microwave for 15 seconds. Pour yummy honey concoction over sweet potato, mash it up, and enjoy with a really small spoon, or risk finishing it too soon!
IF you have honey butter left over, throw some cashews and pecans in it!
Remember, folks: while this is Paleo, I consider it a cheat since the sugars in the honey give you a wallop of an insulin response. It’s just an alternative to the gluten filled cake, muffins, and cupcakes we reach for on cheat days!
