
Pizza?!? Yes, pizza! For those of you sticking with the Paleo Challenge, I’m not cruelly teasing you with the above picture of pizza. It is an example of a recipe adapted under the Paleo guidelines. You can still enjoy some of your favorite foods without the gluten hangover if you’re willing to put in a little time in the kitchen! The above picture was courtesy of Norcal Strength and Conditioning. They tried out a recipe featured on Mark’s Daily Apple for “Primal Pizza” and had the above result. Here’s the key for the crucial component — the crust.
The crust:
- 2 cups almond meal (found at Trader Joe’s)
- 2 eggs
- 1 tsp olive oil
- ½ tsp salt
Mix all ingredients together to form the dough and roll out on a non-stick pan as thin as possible (a rolling pin is useful). Bake crust at 350 degrees for about 15 minutes or until slightly browned.
Afterwards, take the crust out and add your tomato paste/sauce and choice of toppings and bake for an additional 15 minutes.

Pizza looks good. A question though on the rules Mariessa. My paleo book says no cheese. I’m sure I could come up with something equally good to put in place of the cheese on this pizza but i’m not totally sure what i’d do. But there weren’t very good guidelines on how strict of paleo we’re going and all that. Clarification?

THESE ARE MY FIRST PULLUPS EVER!!! Seriously! When I was in middle school they used to give us a grade for PE based on performance…I’d get all A’s and a C in PE because I couldn’t do a pullup or run a mile fast enough. I was seriously traumatized. You have no idea how pumped I was last night!!!
